Leeks In Creamed Coconut Recipe

This is a great side dish that is so easy to make to have with chicken or fish and the creaminess is just something you crave after a while on Paleo, this will see you through.

Leeks in creamed coconut Recipe

This creaminess just satisfies your cravings if you are like me (I used to love mac and cheese). You can certainly try different vegetables to cream as a side dish. Some of my friends have done this with onions. which also works a treat.

I opt for local grown leeks, tinned coconut milk and extra virgin coconut oil. 

This is a great paleo side dish idea that you can prepare for pretty much any fish or chicken dish.

This recipe makes 6 servings as a side. Has a prep time of about 5 minutes and 20 minutes cooking time. This is a great paleo side dish idea to accompany your main chicken and fish meals.

Leeks In Creamed Coconut Recipe

Ingredients

 

4 Leeks white parts cut into 1/4 inch pieces

2 tbsp coconut oil for cooking

1 cup chicken stock

1 cup coconut milk

lemon juice

salt and pepper to taste

 

Method

  1. Saute the leeks in coconut oil in medium heat until soft
  2. Pour chicken stock. bring it to a boil and let it reduce to half
  3. Pour coconut milk, add salt and pepper and reduce it till its like a cream like consistency
  4. Add  lemon juice and season further if you want to.
